Chicken Enchilada Bowls with Cilantro Lime Rice

Okay so I'll have to admit, we love this recipe so much that we eat it EVERY Tuesday. 😍Our 8 year old LOVES it and each week we have him on Tuesday's so I ask him what he'd like the following week for dinner and consistently, this is his fav. And to be honest, it's our fav too!

What you'll need:

Boneless chicken breasts

Red Enchilada sauce- whatever your favorite is (we like the brand Frontera)

Mexican shredded cheese

Mild green chilis

Fajita veggies (if you want to add them)

Taco seasoning

Sour Cream

Salsa (our fav is Jack's)

Blue Corn Tortilla Chips (our fav)

SIDES: cilantro lime rice! If you want to make this to go with it, here's what you'll need

Jasmine rice, lime, cilantro, olive oil


What to do: Boil chicken in a pan with water until white and tender. Pay attention to not overcook the chicken, you don't want it to be too tough when you shred it. You will be able to taste the difference. 

Once cooked through, place chicken into blender (I add it straight to my Kitchen Aid) makes shredding the chicken suuuuper easy

Shred chicken on lowest setting so it doesn't go too fast. Add in chilis, 1 cup of Mexican cheese, and taco seasoning. This makes it suuuuper easy for all ingredients to be added together. 

How to cook the rice: put enough olive oil in the pan to cover the bottom, add two cups of jasmine rice, then 1.5 cups of water. Cover, allow to boil and stir occasionally until rice is fluffy. (Taste it to make sure it's the consistency you like, note: jasmine rice is really soft). Once rice is finished, add the juice of 1 lime, and fresh cilantro ( I typically just cut up a bunch of it and add in enough that you'll notice in the rice).

Since we eat this meal every adults like to jazz it up. Our 8 year old only eats the rice, a sprinkle more of cheese, topped with the chicken. 

We like to sauté up some fajita veggies to go in our bowls. The possibilities are really endless. We eat blue corn tortilla chips, sour cream, and salsa with ours! If you're cutting back on carbs, serve the chicken on veggies and top with lettuce instead! I hope yall enjoy. We know we will....every Tuesday night! 😜
